Ingredients
400g fresh (wok ready) ramen noodles
1 tsp rice bran oil or other neutral oil
350g peeled prawns
2 bunches broccolini, cut into 3cm lengths
3 spring onion stalks
2 cloves garlic, finely chopped
1 tbsp soy sauce
1 tbsp oyster sauce
2 tbsp sweet chilli sauce
1 tsp sesame oil
1 tbsp toasted sesame seeds to serve (optional)
1 chilli finely sliced (optional)

1 tbsp oyster sauce
2 tbsp sweet chilli sauce

1 tbsp toasted sesame seeds to serve (optional)
1 chilli finely sliced (optional)
Method
- Prepare noodles according to package instructions, drain and set them aside.
- Prepare the spring onions by cutting the white ends into 2 cm lengths and thinly slice the green tips. Keep both separate and set aside.
- Mix the soy sauce, oyster sauce, sesame oil and sweet chilli sauce together in a small bowl or jug.
- Heat a wok or large frying pan to high heat. Add the oil and prawns and cook for 2 minutes or until just cooked. Remove the prawns from the pan and set them aside.
- Add the broccolini and white ends of the spring onions. Cook for 2 minutes, tossing occasionally. Add the garlic and cook for a further minute.
- Add the noodles, prawns and half the remaining spring onions to the pan with the sauce. Toss to coat.
- Serve noodles and top with remaining spring onions, chilli and sesame seeds.
Notes:
- To make gluten free, use gluten free ramen noodles, or swap for fresh / wok ready rice noodles.
- In this recipe we use wok-ready or fresh ramen noodles. If you are using dry ramen noodles use 200-250g of dried noodles and cook according to package directions.
- You can use fresh or frozen prawns for this recipe or swap for any other protein of your choice.
