2 slices sourdough toast
½ cup frozen peas
½ cup frozen edamame beans
1 spring onion
25g feta cheese
1 tbsp chopped dill, to serve

Method
- If your edamame beans haven’t been removed from the shells, remove them and discard the shells. Place frozen peas and edamame beans into a microwave-safe container.
- Heat for 1-2 minutes in the microwave until defrosted.
- Finely slice the spring onion and add to the peas. Using a fork, mash the pea mixture. I like to leave it chunky but if you want it smooth you can mash it for longer.
- Add the feta and roughly mix through.
- Spread the mixture onto the toast and sprinkle with fresh dill and season with salt and pepper.
Notes:
- Swap sourdough for gluten free bread or any other bread of your choice
- Make this recipe vegan by swapping feta for plant based feta
