This recipe takes a little time to prepare but is great for meal prepping across the week. It also works well as a lower carb meal with greens on the side, or even some roast veggies or a slice of crusty sourdough!
Ingredients
500g lean turkey mince
1/2 cup crumbled feta
1 cup finely chopped spinach
1/4 cup almond meal
1 tsp dried oregano
1 medium egg
1 tbsp garlic infused extra virgin olive oil
700g jar passata
250g dry spaghetti pasta
1/2 cup crumbled feta

To serve:
Grated parmesan cheese
Steamed greens or a side salad
Method
- Place all of the ingredients, except the passata and pasta, into a large bowl and mix well until combined. You might need to roll up a sleeve and get your hands messy with this one!
- Place the meatball mixture into the refrigerator for 30 minutes.
- Meanwhile, preheat the oven to 180C and drizzle a baking dish with olive oil.
- After 30 minutes, remove the meatball mixture from the fridge and roll it into balls. You can make the balls as big or as small as you like. We used approximately 1 tbsp of mixture for each ball.
- Place the meatballs into a greased baking dish and pour the passata over the meatballs. Place into the oven and cook for 30-35 minutes. Cooking time will vary depending on the size of your meatballs.
- Meanwhile, cook the pasta as per the packet instructions.
- Once cooked, remove the meatballs from oven and serve with the cooked pasta and a side of green beans.
Notes:
- We recommend making this recipe with goat's feta!
- Add garlic instead of garlic infused olive oil
- Make this gluten free and low fodmap by using gluten free spaghetti
