3 overripe bananas

Method
- Preheat the oven to 180’C and lightly spray a baking dish with olive oil.
- Place the bananas into a small bowl and mash with a fork.
- Add the eggs, vanilla extract, and maple syrup to the bowl and mix to combine.
- Add the rolled oats, cinnamon, baking powder and chopped pecans to the bowl and mix well until combined.
- Pour the mixture into the greased baking dish and place into the oven to bake for 35 minutes.
- Remove from the oven and serve.

- This slice can be served either warm or cold.
