A healthier twist on the fave sausage rolls. We’ve used lean beef and added in extra veggies and fibre.
Ingredients
1 brown onion
1 clove garlic crushed
2 carrots
1 zucchini
1 tbsp chia seeds
500g extra lean beef mince
¾ cup breadcrumbs
2 eggs
1 tbsp tomato paste
1 tsp Italian herbs
3 sheets puff pastry

Method
- Allow the puff pastry to defrost.
- Finely dice the onion and grate the carrots and zucchini. In a large mixing bowl add the vegetables, garlic, mince, chia seeds, breadcrumbs, 1 of the eggs, tomato paste and italian herbs. Mix well until combined.
- Preheat the oven to 200°C and line 2 baking trays with baking paper. Whisk the remaining egg in a small bowl.
- Lay the puff pastry sheets on the baking tray and add ⅓ of the mince mixture in a sausage lengthways across the pastry. Be sure to place the filling right to the end of the pastry. The sausage mixture should be about 4cm wide and 2cm high.
- Tightly roll the pastry to enclose the meat. Brush a little egg on the last 2cm to seal the pastry to the roll. Repeat for the 2 remaining pastry sheets.
- Cut each roll into 6 even pieces using a sharp knife. Brush the tops of the sausage rolls with a little egg and then sprinkle the sesame seeds on top.
- You can store the uncooked rolls in an airtight container in the freezer at this point if you wish. Alternatively, place onto the baking sheet and cook in the preheated oven for 30 minutes or until golden brown.
- Serve immediately or allow to cool and store in an airtight container in the fridge.
Notes:
- Makes 18 small sausage rolls, we’ve calculated the nutrition information based on 3 rolls. You can make these gluten free by using gf pastry and breadcrumbs.
