Chicken Marinade:
400g skinless chicken thigh fillets
3 tbsp greek yoghurt
¼ tsp ground turmeric

Rice:
1 tbsp extra virgin olive oil
1 small onion, finely diced
1 tsp curry powder
½ tsp smoked paprika
1 cups basmati rice
1 tsp lemon rind
2 cups chicken stock
4 tbsp chopped flat-leaf parsley
4 tbsp toasted slivered almonds
2 bunches broccolini
1 tbsp extra virgin olive oil
1 small onion, finely diced
1 tsp curry powder
½ tsp smoked paprika
1 cups basmati rice
1 tsp lemon rind
2 cups chicken stock
4 tbsp chopped flat-leaf parsley
4 tbsp toasted slivered almonds
2 bunches broccolini
Method
- Combine the yoghurt, turmeric, lemon juice and garlic in a mixing bowl. Stir to combine. Add the chicken fillets and toss to coat. Cover and place in the fridge for 30 mins to marinate.
- Preheat the oven to 170°C.
- Heat the extra virgin olive oil in an oven-safe pot over high heat. Add the chicken fillets and cook for 2 mins on each side or until browned on the outside, they don’t need to be cooked through at this stage. Remove chicken from the heat and set it aside.
- In the same pot, turn the heat to medium-low and add the diced onion. Cook for 3-4 minutes or until soft. Add the rice, curry powder and paprika to the pan. Toss to coat. Add the stock and lemon rind to the pot and bring to a gentle simmer. Turn the heat off.
- Add the chicken to the pot on top of the rice. Place a lid on the pot and place it in the oven for 10 minutes. After 10 minutes remove the lid and add the brocolini to the dish. Return to the oven and cook for a further 10 minutes with the lid off or until the chicken is cooked through.
- Remove the dish from the oven and top with chopped parsley and toasted almonds. Serve alongside broccolini.
Notes:
Swap the broccolini with any other green veggies or even serve with a salad on the side.
